Growing Up in Mexico City
Rosalba, known as Rosie, was born and raised in Mexico City. Long before she ever thought of herself as a baker, she was a granddaughter watching her family work — in kitchens filled with the sound of orders called out, plates moving quickly, and the smell of something always rising in the oven.
Those early years shaped the way she sees food today: not as something separate from life, but as the thing that holds a family together.
The Cafés de Chinos
Her grandparents owned two traditional cafés de chinos, and some of her earliest memories include busy restaurants, customers waiting for fresh bread, and the smell of her grandfather's freshly baked biscuits.
It was a world of long mornings and full tables — where bread wasn't just served, it was the reason people gathered.
Her Grandfather's Influence
Her grandfather was one of the strongest influences in her life. She watched him work with a kind of patience and pride that she wouldn't fully understand until years later, when she started baking herself.
That influence never left her. It's in the way she measures, the way she waits for dough to be ready instead of rushing it, and the way she still thinks of him every time something comes out of the oven right.
The First Bolillo
Years later, Rosie returned to baking while rebuilding her life, raising her children, and creating a source of income that allowed her to remain close to her family.
The first bread she made was a Mexican bolillo — the same crusty roll she grew up watching her grandfather bake. It was simple, familiar, and it was hers.
Why Ingredients Matter
A personal health experience also led her to pay closer attention to ingredients, preparation, and what she was putting into the food she made.
That experience changed the way she approaches every batch — choosing ingredients with intention, and taking the time to do things the right way rather than the fast way. It's a perspective she carries quietly into her kitchen every day, not as a promise, but as a practice.
I want my bread to remind you of the people you love and where you come from.
Her mission is not simply to sell bread.
She wants her products to remind people of family, community, home, tradition, and the people they love. Every loaf that leaves her kitchen carries a little of that intention with it.
To grow Rosie's Artisan Baker as a small, intentional bakery that never loses the thing that started it — family recipes, honest ingredients, and bread made to be shared. As the bakery grows to serve more of Palm Beach and Broward County, that heart stays the same.
